Since it's Easter I thought I would make a batch, or two, of traditional Greek Easter cookies. This is a recipe that was given to me by my lovely grandmother and it holds a special place in my heart. My family and I have been making these cookies since I was really young, so it brings back a lot of memories.
While reading and making these cookies keep in mind that you will need to make adjustments as you go along. Also this recipe is definitely not for the health junkies. But hey, you are allowed to indulge sometimes! :)
Add all the ingredients, in no particular, in a big mixing bowl and mix.
Mold the mix to your desired shapes, drizzle an egg mix over them and bake at 360 degrees Fahrenheit- 180 Celsius.
4.5 cups of flour
the zest of 1 orange
1 glass of freshly squeezed orange juice (remove the pulp)
1 glass of vegetable oil
1 glass of sugar
2 tsp. baking powder
1/2 tsp. baking soda (mixed with a tiny bit of the orange juice)
1 tsp. vanilla extract
1 egg (so that you can drizzle it on top of the cookies before you bake them)
This recipe makes 2 large platters of cookies. If you need less then half it.
Feel free to adjust the measurements to your desire. If you need more flour add it. If you need more oil add that. The mixture should be dry enough so when you play with it it doesn't fully stick to your fingers, yet moist enough so that it doesn't fall apart . This is a recipe that is made by heart not by scale, so enjoy it!
